Chicken Quesadillas

We all need those “go to” recipies.  You know – the ones you can make if company is coming and be certain they will be tasty.  In my blog space you will find many recipies – I cook mostly every day so I don’t post about all that I cook, however I try to share quick, tasty, and relatively healthy ones that you can depend on.  Following you will find my tried and true recipe for Chicken Quesadillas… Should you choose to make them, I pray your family finds them as tasty!

  • Prepare filling – poach chicken in chicken broth, onions, peppers, cilantro, adobo seasonings, garlic etc…. Don’t use a lot of water for this mixture, you want your broth to be tasty and rich.  Poach chicken in this broth and let it cool allowing seasonings to penetrate chicken.   I also add chopped spinach to mine at the end for added veggie content.  After chicken has cooled I drain the liquid and place chicken in bowl.  Add Mexican blend cheese in another bowl.

  • In preheated skillet add flour tortilla and heat on both sides until it rises a bit and lightly browns…Chicken Quesadillas 002
  • Place tortilla on prepared work surface and add toppings…Chicken Quesadillas 005
  • Fold over, brush with olive oil and sea salt.
  • Add to skillet that is already warm with olive oil side down.  Immediately brush this exposed side with olive oil and sea salt.Chicken Quesadillas 008
  •  Leave in skillet until cheese has melted nicely.
  • Return to cutting board and let rest for a few minutes.
  • Slice and serve with salsa of choice!
