In an effort to reduce the amount of sodium nitrates in our diet I decided to roast a turkey breast. I figured it would be dinner on night one and used for sandwiches on night two.
Remembering turkey roasting from long ago I was prepared for a long and arduous process. However it was not so. My thawed turkey only took 2.5 hours to roast with two basting sessions in between.
It was completely juicy and completely lovely to look at.
To top it all off my $10 bird saved me major bucks figuring it will last us at least two meals.

I have not tried just roasting a Turkey Breast. You made it sound so delicious I want to roast one with some quick dressing. Yum! Thanks for the dinner thought.
